Cake:

1 1/2 cups sugar                                                                                                                          

1/2 cup brown sugar - packed

2 tsp cinnamon

2tsp baking soda

1/2 tsp salt

1/4 tsp nutmeg

1/4 tsp ginger

1 cup oil

1/2 tsp vanilla

4 eggs

2 cups flour - sifted

16 oz pumpkin

1 large apple, peeled and diced

1/2 cup nuts

Mix sugars, spices, oil, vanilla and eggs together. Add flour 1/2 cup at a time beat well each time. mix in pumpkin. Stir in nuts and apple by hand. Pour into a greased floured bundt pan. Bake  70 minute.  Remove from pan. Cool.

Icing:


beat well and frost cake.  Cake must be kept refrigerated.
